Delicious and gorgeous homemade beet & carrot juice!
One of my favorite things to do is to take veggies that are on their last leg and turn them into juice. You know what I'm talking about? Like, when you've got some celery or carrots that look and smell fine but are pretty limp and unappealing. Well I hate wasting food (and money), so they become my juice!
Although you may not get the fiber from the fruits and veggies you juice, you still get a ton of health benefits! Plus, the pulp makes amazing scraps for your food composting!
Here's just a quick list of why juicing is so good for you:
Much easier for your body to absorb all the phytonutrients, vitamins, and minerals
Because you juice more fruits and veggies than you can eat, you consume higher doses of the micronutrients and phytochemicals
It's said that raw juices (without added sugar and gunk) helps to detox the body and even fight cancer!

Back to my gorgeous homemade juice pictured above. :)
I had some week old beets and carrots in my fridge and decided to juice 'em. It came out so gorgeous and delicious, I had to take a pic and let you guys know! In case you didn't know, it's said, beets help keep your blood pressure stable, improve digestion, are powerful inflammation fighters, and have anti-cancer fighting properties (just to name a few). They're also energetically supportive of Muladhara (our root chakra)!
Okay, here's what I used:
3 red beets
3 whole carrots
1/2 pear (I had this left over from the day before)
pinch of ginger
This made 9oz of juice and was delicious!
Buying a juicer is a huge investment so it took me a while to give in. I spent days researching a good one that was also in my price range. I could not be happier! This little thing is incredibly powerful and simple to use (and clean!). I've had it for a year with zero problems.

Juicing has become one of my favorite things. It's not only great for my health but I waste less food and end up with beautiful pulp for my compost! That's a win, win, win!
